Ingredients ( For 10 cups )

2 ripe avocados
1 lemon
10 gambas or very large shrimps
2 oranges
Olive oil
Salt and pepper


1• Shell the prawns. Squeeze the juice of the oranges, filter it. Put the prawns to marinate in the orange juice about 1 hour.

2• Prepare the guacamole. Peel avocados, mix in a blender, add lemon juice. Season with salt and pepper (you can add 1 spoon of whipped cream) and return to the cups with a bag. Reserve in the fridge.

3• Heat a pan with olive oil. Cook the pre-drained prawns, season them. Reserve on 1 plate. Deglaze the hot pan with the orange juice that served as a marinade. Reduce to obtain a thick juice. Mix the juice and the prawns and let cool.

4• Cut the prawns into small pieces and keep the tail. Put them on the guacamole. Add a little reduced orange juice. Garnish with mint and chives.
