Chocolate truffles are part of my little Christmas world, but between chocolate, cream and butter, the addition can quickly become heavy calorie ... So I propose a recipe a little lighter, without butter. The only constraint is to prepare them 4 days before they have time to harden properly. They will keep a few days in the fridge.

ingredients ( about 40 truffles )

300 g dark chocolate
40 cl liquid cream
1 vanilla pod
4 drops of essential oil of orange (optional)
100 g bitter cocoa powder

Steps ( 4 days )

1• Break the chocolate into squares and put them in a bowl. At the same time, heat the cream with vanilla split. Remove the vanilla, then pour the hot cream over the chocolate and let stand for 5 minutes. Add orange essential oil if you wish. Mix everything and let cool. Let stand for 2 hours in the fridge. With the help of a Parisian spoon, form balls of ganache and quickly coat them in the cocoa powder.

2• Let rest 4 days in the fridge, then the same day, form round balls rolling the truffles in your hands. Sprinkle with cocoa powder and present to your guests.
